Shopping: 500cm³ full cream milk

Apparatus

Water baths at 36°C
1 and 3 cm³ pipettes

5% Bile Salts (25cm³ per group)

100cm³Phenolphthalein - diluted to half strength with ethanol (5cm³ per group)

2% Lipase (5cm³ per group)

"Alkaline milk" - 50cm³ full cream milk and 10cm³ 0.2M Na₂CO₃(1M Na₂CO₃= 286.15 gl^-1 so 0.2M = 57.2 gl^-1)
